The hominy is already al dente—just simmer it in a seasoned stock (10 minutes in a pressure cooker works great), then add cooked meat of your choice or keep it plant-based. For green pozole, blend 2 green chilies, 250 g canned tomatillos, 1/4 cup toasted pumpkin seeds, and a few sprigs of fresh herbs like cilantro or epazote. Stir into the stew toward the end.
