El Yucateco Ahciote Paste is made with a blend of annatto seeds, spices, herbs and vinegar. It is traditionally used in Mexican cuisine, specially in the Oaxaca and Yucatan regions to marinate meats, poultry, fish and game. A beautifully bright red paste can be mixed with water, oil or citrus juice to marinate meat or vegetables, imparting mild heat and smoky flavours. Combine with lime juice to marinate a whole snapper, then top with sliced onions and tomatoes before covering in foil (or banana leaves) and cooking on the BBQ.
